Tried and True Guacamole

This is an absolute favourite in our house. The prep time is less than 10 minutes to make this beautiful Mexican dip. Serve with tortilla chips, tacos, or on toast as a jazzed up version of avocado toast.

Ingredients
  

  • 2 ripe avocados
  • 1 clove garlic, minced
  • ¼ onion, finely chopped
  • 1 jalapeño or Anaheim pepper, finely chopped Optional; the Anaheim pepper is milder
  • cup cilantro, finely chopped
  • juice from ½ a lime
  • 1 tsp salt
  • ½ Roma tomato, finely chopped

Instructions
 

  • Cut open the avocados and remove the stones. Scrape out the inside and mash in a bowl, mortar & pestle, or molcajete;
  • Add the garlic, peppers (optional), onion, tomato, salt, cilantro, and lime juice;
  • Stir well, but don’t overstir, the texture should be a bit lumpy;
  • Enjoy!
