  • cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • cups mashed ripe bananas (3-4 bananas)
  • ¼ cup milk
  • ¼ cup sour cream
  • 2 tbsp oil
  • ½ cup unsalted butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 tsp cinnamon
  • 1 tsp vanilla extract


  • Preheat the oven to 180 °C (350 °F).
  • Line 23 x 13-cm (9 x 5-inch) loaf pan with a strip of parchment paper.
  • In a bowl, combine flour, baking powder and baking soda. Set aside.
  • In another bowl, combine bananas, milk and sour cream.
  • In a third bowl, cream butter and sugar with an electric mixer. Add egg, oil and vanilla and beat until smooth. At low speed, add dry ingredients and banana mixture.
  • Pour into the loaf pan. Bake for 50-60 minutes or until a toothpick inserted in the centre of the cake comes out clean.
  • Let cool before slicing.
