Instant Pot Stuffed Peppers

Who knew it could be so EASY to make stuffed peppers in the Instant Pot!

The cook time is only 5 Minutes. Yes, you read that correctly: 5 MINUTES! Stuffed peppers are a great option for those on a lower carb diet. For #keto fans, just omit the rice.

  • 1 Instant Pot

Ingredients
  

  • 1-1½ cups cooked rice
  • 1 egg
  • 5 medium (or 4 large) bell peppers
  • 1 lb ground beef
  • 1 small onion, diced
  • 1 tbsp garlic, minced
  • 3 oz tomato paste
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • 1 tsp basil
  • ½ tsp sage
  • salt & pepper to taste
  • 3 tbcp Worcestershire sauce
  • cups water
  • ½ cup shredded mozzarella cheese

Instructions
 

  • Wash the peppers, remove the tops and remove seeds;
  • Set the mozzarella cheese aside;
  • In a mixing bowl, combine ground beef, cooked rice, and all other ingredients, except the mozzarella cheese;
  • Stuff the bell peppers equally with the mixture;
  • Add a trivet or steamer basket to the Instant Pot;
  • Add 1 ½ cups of water and place the peppers onto the trivet/steamer basket;
  • Close the lid, lock in place, and turn the knob to sealing. Hit the manual or pressure cook button and set for 5 minutes. Allow a 5 minutes natural release when cook time is up;
  • Using the handles of the trivet or steamer basket, carefully remove the peppers from the pot;
  • Top each pepper with shredded mozzarella cheese;
  • Broil for 1-2 minutes, watching carefully. They are done when the cheese is melted;
  • Let cool and enjoy!
